History and origin of the arequipeño solterito
The origin of the solterito dates back to pre-Columbian times when the mix of native ingredients created great dishes that have endured centuries of history. On the other hand, the name solterito is said to have originated from the custom of preparing this salad during the San Juan festivities in June. During this festivity, large fairs and community events were organized. Young single women took this salad to the San Juan fairs as an offering, and that is where the name "solterito" came from.
Ingredients of the recipe Solterito Arequipeño
- 2 1/2 cups shelled corn or sweetcorn.
- 1 1/2 cups cooked and shelled beans.
- 1 large red onion, julienned.
- 2 large diced tomatoes.
- 1 cup diced fresh cheese.
- 1 rocoto pepper, deveined and deseeded, thinly sliced. (optional)
- 1/2 cup black olives. (preferably Botija)
- 3 tablespoons chopped parsley.
- 2 tablespoons olive oil.
- 2 tablespoons red wine vinegar or lemon juice.
- Salt and pepper to taste
Preparation
1. Put a pot of water to boil there and cook the shelled corn until it is al dente. Once cooked, drain and let it cool.
2. Now cook the beans until they are done; peel them and set them aside.
3. In a separate large bowl, start mixing the tomato with the onion, fresh cheese, rocoto pepper, and olives.
4. Add the corn and beans to the previous mixture.
5. Season with olive oil, red wine vinegar or lemon juice, salt, and pepper to taste.
6. Finish your recipe by adding the chopped parsley on top.
7. With all the ingredients in the bowl, stir and let it rest in the refrigerator for at least 30 minutes before serving.
