This emblematic dish originated in Callao, near Lima, and is used as an appetizer for any seafood dish, such as ceviche or jalea. Its peculiar name, chalaca, is derived from the indigenous word “challhua” which means fishing, coast. Therefore, those who dedicated themselves to this trade were called “challahaque”.
Origin of the word: Choros a la Chalaca
Choros a la Chalaca are words that, over time, transformed into chalacos, a term used to refer to the inhabitants of the Callao region. On the other hand, the word choros refers to the shell in which it is served, which is nothing more than a mussel.
Ingredients for the traditional Recipe
- 12 mussels.
- 2 onions, chopped.
- 1/2 rocoto pepper, deveined and chopped.
- 1/2 cup diced tomato.
- 1 1/2 tablespoons chopped parsley.
- 3/4 cup shelled corn.
- Juice of 3-4 lemons.
- 1 tablespoon ground yellow chili.
- 1 tablespoon oil.
- Salt and pepper, to taste.
Preparation
- Clean the mussels well with a brush.
- Bring them to a boil in a pot, and as they open, remove them from the pot to prevent them from overcooking. Do not use the mussels that do not open; discard them.
- Let the mussels cool uncovered, and then place half of them in a bowl.
- 2 In a bowl, mix the onion, rocoto pepper, tomato, parsley, shelled corn, lemon juice, yellow chili, oil, salt, and pepper.
- Important: Let stand for 5-10 minutes.
- Place approximately one tablespoon of the mixed ingredients in each mussel shell.
- Serve and enjoy the deliciousness of this dish.
