The history of estofado de pollo


Its origin, as we mentioned earlier, is European, particularly in terms of the stewing technique. However, Peruvians have a rich history of innovation, and they have added their unique touch to the dish by using chicken instead of meat, along with native aromatics and vegetables such as potatoes, carrots, onions, and tomatoes. Traditional estofado de pollo recipe

  • 1 whole chicken, cut into pieces.
  • 3 cloves of garlic, minced.
  • 2 medium onions, finely chopped.
  • 2 large tomatoes, chopped.
  • 2 large potatoes, peeled and cut into pieces.
  • 1 carrot, sliced.
  • 1 cup of peas.
  • 1 yellow pepper.
  • 1 cup of chicken broth.
  • 1/2 cup of white wine (optional).
  • 1 bay leaf.
  • Vegetable oil.
  • Salt and pepper to taste.
  • Cumin and oregano to taste.
  • Chopped parsley to garnish.
     

Preparation


Season the chicken pieces with cumin, salt, pepper, and oregano. Heat some vegetable oil over medium heat in a pot or large skillet, browning the chicken on all sides. Remove the chicken and set it aside.
2. In the same pot or pan that you browned the chicken in, add a little more oil if necessary, and sauté the chopped onion until it is transparent. Add the chopped garlic and cook for a few more minutes. Then, add the chopped tomatoes and yellow pepper. Cook until the tomatoes have dissolved.
3. The next step is to add the carrots and peas to the sofrito. Stir well and cook for a few minutes. Then add the potatoes and mix well.
4. Place the chicken pieces back into the pot and add the chicken broth and white wine (if you decide to use it).  Add the bay leaf and make sure it is well seasoned with salt and pepper. Bring to a boil.
5. Cover the pot tightly and cook over low heat for about 30-40 minutes or until the chicken and vegetables are fully cooked and soft.
6. Once the stew is ready, serve it, but first remove the bay leaf and sprinkle chopped parsley on top. It is essential to serve while still hot.
